A few weeks ago I visited Seattle and pretty much devoured the city one restaurant at a time. I ate some seriously delicious food and I cannot wait to share it with you. Over the next few weeks I’ll be sharing each week  a new wonderful Seattle hot spot I stumbled upon. So sit back and enjoy some new flavors.

While touring the famed Pike Place Market I stumbled upon the cute little spot by the name of Beecher’s Handmade Cheese. Owner Kurt opened this quaint little shop back in 2002 and shortly after that opened another location in New York. Read all about his story {HERE}. It was really hard to decide what to get. Even though their menu was small everything sounded absolutely amazing and I’m guessing by the huge line of people everything probably is. Just a short wait (these people are good at serving up their noodles & cheese) I decided on the their World Famous Mac ‘n’ Cheese . I figured I would try their most popular flavor to see what all the hype is about. They also offer gluten free options. Just ask about them. And boy oh boy my mouth is watering just thinking about this cheesy. noodley goodness. I wish I had a bowl right now. I could eat this mac and cheese for breakfast, lunch and dinner. It was creamy, yummy and seriously delicious.

Don’t sell yourself short get the large size. I got the smaller size and wished the whole time I had more. Did I mention they have a gigantic size tub of cheese (pictured below). I would take a bath in the cheese if they let me. :) This place is perfect for a quick snack or lunch for the family. They are not just a mac and cheese shop. They sell sandwiches and cheese to go. Trust me you will not want to miss out on this delicious treat. Stop by and try Beecher’s next time you’re in Seattle. And if you’re a local I’m totally jealous!
